Chicken Hong Kong





Ingredients for


Boneless chicken breast cut into cubes 250 grams

Oil 2 tablespoon + to deep fry
Salt to taste
Black pepper powder to taste
Cornflour/ corn starch 4 teaspoon
Egg 1
Spring onions with greens 3
Dried red chillies 2-4
Ginger sliced 2 inch
Garlic chopped 2tablespoon
Red chilli paste 3 tablespoon
Red chilli sauce 2 tablespoon
Soy sauce21 tablespoon
Chicken stock ¼ cup + 2tablespoon
Sugar 1 teaspoon
Vinegar 1 teaspoon




Method

Step 1
Heat sufficient oil in a deep pan.
Step 2
Place chicken in a bowl, add salt, pepper powder and 2 teaspoons cornstarch.
Step 3
Break an egg into another bowl and whisk well. Add half egg to the chicken mixture and mix well.
Step 4
Slide the chicken cubes into hot oil and deep-fry chicken till golden and crisp. Drain on absorbent paper.
Step 5
Halve spring onion bulbs,reserving greens,and separate layers. Diagonally slice dried red chillies and discard seeds.
Step 6
To prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add ginger and saute for 60 seconds. Add garlic, mix and saute on high heat.
Step 7
Add sliced dried red chillies, red chilli paste, red chilli sauce, soy sauce, ¼ cup chicken stock and spring onion bulbs, mix well and saute for a minute.
Step 8
Add fried chicken, salt, pepper powder, sugar and vinegar and toss to mix.
Step 9
Mix remaining cornstarch in 1 tablespoon chicken stock, add to the sauce, mix and cook on low heat for a minute.
Step 10
Roughly chop spring onion greens, add to sauce reserving some for garnishing and mix well.
Step 11
Serve hot garnished with chopped spring onion greens.
